Salt and Pepper Steak
This recipe is from BA June 2014 and it is more about technique than really being a recipe. This is a very simple dish and when the steak is cut well, it is amazing.
Ingredients
- 1 lb. skirt steak
- Salt
- Pepper
Instructions
- Cut skirt steak into 1/4 lb. pieces.
- Season with salt and pepper.
- Grill over medium heat until medium rare, about 4 minutes per side.
- Let rest for 5 minutes before slicing thinly against the grain.
Notes
Cutting this steak properly is very important, otherwise it can be nearly impossible to chew.
In Tacos:
Saute onions and crushed red pepper flakes in a cast-iron pan - no oil, so they get all smoky - then add slices of day-after skirt steak and cook until crisp. In a Sandwich:
