Garlic Mashed Potatoes

Garlic Mashed Potatoes
  • 2 pounds unpeeled red potatoes, quartered
  • 5 oz butter, room temperature
  • 2 oz Romano cheese, grated
  • 2 tbsp chopped garlic
  • 1 tsp salt
  • 1 tsp dried oregano
  1. Bring a large pot of salted water to a boil.
  2. Add potatoes and cook until tender but still firm, about 45 minutes; drain.
  3. Stir in butter, cheese, garlic, salt and oregano.
  4. Mash with a potato masher or with an electric mixer.
